Cat New, Thunder Heart Bison: Ranch to Trailer
If you haven’t made it to the E. Sixth Street Food Truck Park yet to try Thunder Heart Bison: Ranch to Trailer, I highly recommend it and it’s safe to say the youth at Austin Children’s Shelter would too! Cat New, Co-Founder and Chef spent an evening with 10 youth who are preparing for adulthood and young mothers, cooking and sharing the joy of good food.
Menu: Bison Spaghetti sauce from scratch with pasta, fresh arugula salad with tomatoes, watermelon radishes and cucumbers and buttery garlic bread.
Cat New is truly committed to not only providing great food, but sourcing the food as locally as possible. Before we started cooking, she sat down with the youth and talked about each vegetable, the farm it came from – and how easy it was for them to shop there, too. “I know you might think that local and organic is for people with money, but that’s not true. The food is here for you, too”.
After two hours of chopping every vegetable you can get within a 10 mile radius of the shelter, browning bison with garlic and fresh herbs, lathering french bread with garlic butter and whipping up a delicious basil vinaigrette, dinner was served.
